Maffra Cheddar with Dargo Walnut

Maffra’s Dargo Walnut cheddar is a wonderful example of the amazing produce that is grown on the land in Gippsland. The cheese is made by Maffra Cheese Co, from milk of a single herd of Holstein-Friesian cows in Tinamba to a traditional Red Leicester recipe. During the manufacturing process the curds are infused with crushed walnuts which have been sourced from the Wilkinson family walnut farm in East Gippsland. The Wilkinson family walnut crop is highly reputed and supplies a number of top end restaurant and retail customers.
This cheese is firm with a slightly flaky texture. The cheese is matured for at least three months, allowing sufficient time for the walnut oil to permeate the sweetness of the cheese. The result is a deep, smooth, nuttiness which lifts the creamy undertones of the cheese.
