Fromager d’Affinois Bleu is a French double-cream soft blue cheese made from cow’s milk.
It is produced by the Fromagerie Guilloteau company in North East France and is know for it’s creamy texture and light blue flavour.
Fromager d’Affinois utilises a milk treatment process called ‘ultrafilatration’ that removes water from the pasteurised milk, concentrating all the other components, before transforming the milk into cheese.
In the case of d’Affinois Bleu this results in a very consistent, creamy cheese with a mild blue flavour.
