Maffra Cheese Co, under the watchful eye of industry veteran and AO Ferial Zekiman, has dominated the farmhouse specialty cheese market with their classic English style cheddars. In recent times, Ferial has been experimenting with white and blue mould cheeses to expand into other categories and utilise the wonderful milk from their Holstein-Friesian / Holstein-Jersey herd.
The result is a keenly priced, classically flavoured modern Brie, now available at Gippsland Cheese.
