Hitting the smooth, mild, mature flavour brief is not easy in these days of sharp, bitey to near acidic, semi-hard cheeses. Mary Valley Mature Cheddar has been aged 6 – 12 months and is right at that point of commencing the development of crystalisation that generally comes in after 12 months of age. Still soft in texture it can easily adapt to being thrown in a toastie, through to being it’s own master on an every day cheese board.

Ever since we launched our hugely successful Gippsland Spring Milk Cheddar back in 2019, we’ve been looking for something great to extend this category for customers. Unfortunately production of GSM Cheddar stopped last year and the race was on!
We’re proud to finally release our new Mary Valley Mature Cheddar, in 200g labelled blocks or 1kg clean skin blocks.
