Classic Australian farmhouse cheddar wrapped in cloth and then waxed to maintain a smooth, moist paste. This cheese is aged in the Maffra maturing rooms for more than 15 months.
This Maffra award-winning Aged Rinded Cheddar exhibits the classic Cheddar flavour profile – sweet and rich up front notes with complex after tones. The texture is moist, and not too crumbly. Each cheese is ripened under cloth to allow a thin rind to form, then graded and stencilled with the Maffra name. It’s then rinded with wax to maintain moisture and reduce air, allowing a rind to form on the outside of the wheel.
