Made by hand in Tinamba from a single herd, Maffra Sage Derby is based on a traditional British, semi-hard, Derbyshire recipe. It is mild in flavour, has a firm texture and creamy after taste. The cheese presents with strong green mottling from the addition of sage leaves to the curd prior to pressing however the sage flavour is subtle and not overpowering. It’s well matched against the creamy texture of the underlying cheese.
