What more can be said about this classic Australian marinated cheese? In the market for more than 20 years now, Meredith Diary originally worked with cheese doyen Richard Thomas to come up with a marinated recipe. This has continued to be refined over time to ensure the right balance of flavours.
The chevre is made from the current day’s milk and so avoids any risk of attracting the ‘goaty’ flavour that can exist in lower quality or less cared for milk. This results in a super creamy texture and sets the cheese up perfectly to be enhanced by the addition of the Extra Virgin / Canola Oil blend, garlic and selected herbs.

King River Gold, named after the perennial river of the North-East Murray catchment and located in the alpine and Hume regions of Victoria, is an intense, full flavoured wash rinded cheese, made in the shape of a loaf. The cheese is smeared with a Brevibacterium Linen brine solution which promotes the intensity of flavour that washed rind cheeses are known for. The wash helps to keep the cheese moist and supple in texture. As it ripens this can become increasingly soft and ‘bulgy’, however not runny.

Washed or smear rinded cheeses are well known for their stinky nature, some find them overpowering! This was one of the first cheeses ever made by Milawa cheese maker David Brown, and has a very strong following. It has a soft interior with a slightly gritty rind and a rich almost smokey, nutty flavour.

Shadows of Blue is a light and smooth flavoured blue cheese wrapped in natural bees wax. It’s made with double the amount of cream of a traditional blue cheese and is waxed early in the ripening process to control the balance of sweet and pungent flavours. As a result it’s a super creamy blue cheese that is very accessible to those that don’t eat a lot of blue cheese or are recently starting their blue cheese journey. The mould used in this cheese is a similar, more delicate strain, to that of Roquefort, imported from Italy and produces mellow buttery flavours.
